Sunroof, yes. You'll need all the OEM parts, which are fairly hard to get. Then it'll be some precise cutting, and running of seals, and drain lines. But most people capable wouldn't be asking. Expect to pay around $3000 at a shop that does sunroof installs.
Convertible, absolutely not the factory way. You could do a hard top convertible and brace the chassis. But if you knew that you wouldn't be asking. The bodies are quite different. Don't expect any shop to take this on, and if one does, don't be surprised if it's garbage when you get it back or a $10,000+ bill. Involvement of removing airbags will probably make shops unable to legally do it it. Plus, it's a huge safety risk to you anyway
