How do we change the digital speedometer reading from KPH to MPH? I don't have a car manual yet to see if its in there and the dealer told me it can probably be done.

I think your dealer lied to you. I believe it was made encase you were to go to another country you would know how many KPH you were going. Im sure the foreign eclipse have KPH with MPH on the digital screen.
Im from Canada, but my Speedometer is in MPH and the little digital one is in Kmph. I just use the digital one though. I recently took a trip to MN and having MPH right there was quite handy though! 
In the manual, it shows two different type. One with the MPH and digtial Kmph then there is one with Kmph and digital MPH. Its out there, just gotta find them.
